Dinner, Jersey Shore Style.

Now, it's no secret that MTV's "The Jersey Shore" was very successful, particularly because of viewers like my roommates and I.  It may not be common knowledge that the show also reminded some of us of the foods we love...and inspired us to mix up the weekly cooking routine at home!

Enter...sausage and peppers!  Yes, this photo is a giant pan of sausage and peppers.  Very simple to make - I used mild, spicy or sweet Italian chicken sausage (to keep it healthy).  You need: a large onion (I prefer sweet, yellow works great too), three large peppers (I used red, yellow, orange, most people go for green..), olive oil, garlic, salt and pepper, and Italian spices if you have them.

1.  Sautee onion and garlic in the olive oil
2.  Add peppers, spices, and cook on high until onion and peppers are carmelized
3. While the peppers are cooking, add the sausage to another pan and cook through
4.  Just when the sausage is cooked, add it to the peppers and onion, allow the flavors to come together, add spices, salt and pepper to taste

Serve over pasta, on a roll or bread (rice pasta or bread if you're GF), or even with veggies.  Sprinkle with parmesan cheese for added flavor.  Buon appetito!
